Tasting Notes
Steady, garnet red in color, the nose expresses hints of small black fruits, ink and black pepper. The palate displays strident tannins and black licorice notes.
Food Pairings
Grilled and Roasted Red Meats, including lamb beef or pork. Hearty vegetarian stews and casseroles also pair well.
Winemaking Notes
The grapes are hand-harvested at maturity. The harvest, totally destemmed, is vinified in a cement vat. A long maceration allows for gentle tannin extraction. Only the free-run juice is used. The wine is then aged in barrel of which a third are new casks and the other part in casks having matured wine once or twice before. The aging lasts between 14 and 18 months. The wine is then bottled un-fined and unfiltered.
Vineyard Notes
The wine comes from the Greffieux situated at the foot of Hermitage hill. The soils are composed of glacial alluvial deposits along terraces composed of shingles and clay.
