Dominio del Soto Ribera del Duero Albillo
DO Ribera Del Duero
Tasting Notes
The wine is golden yellow with a complex nose displaying fruity notes of pears, white blossoms and a smoky and butter side. The palate develops a fine structure, a nice smooth character and a smoky and saline finish which gives the wine excellent length.
Food Pairings
Stir fried calamari fish, grilled snapper or grilled chicken and vegetables. Best enjoyed between 10-12 C.
Winemaking Notes
The grapes are picked by hand and placed into crates. Direct pressing in whole bunches, cold static settling, fermentation with native yeasts in stainless steel vat (70%) and demi-muid barrels (30%). No malolactic fermentation. The wine is then aged on its lees for 12 months.
Vineyard Notes
The vineyards are planted on old terraces lying at altitude (850-900m above sea level). Deep clay-limestone and even marly-limestone soil.
Technical Info
