Tasting Notes
The wine is very dark and very dense ruby red with purple tints. Aromas of intense black fruit such as blackberry and blackcurrant, laced with spicy aromas of thyme and mocha. The palate is very concentrated with remarkable roundness, juicy fruit and spicy aromas of licorice and cinnamon. Velvety tannic weave and a fruity, oaky finish with flavors of dark berries and vanilla complete the finish.
Food Pairings
Pairs perfectly with roast leg of lamb or grilled entrecote with a pepper sauce. Serve between 17-18°C. Decant 1-2 hours before serving is recommended.
Winemaking Notes
Harvesting is carried out by hand and transported in crates of 20kg. Vinification takes place in concrete tanks with cold pre-fermentation maceration. The wine spends a long 4-6 weeks in vat. The wine is aged in oak barrels for 12 months, followed by concrete tanks.
Vineyard Notes
The vineyards are planted on old terraces lying at altitude (850-900m above sea level). Deep clay-limestone and even marly-limestone soil.
