Tasting Notes

In Crozes, our Syrahs must express a subtle bouquet of violet and liquorice with the right balance between fruit and tannins.  On the palate one finds notes of fresh fruits and graphite for a very concentrated wine where the tannic structure melts into the wine in roundness and fruit.

Tasty poultry, sausages, and meat.

VINIFICATION:
Total crushing - pre-fermentation natural maceration of temperature and time varying according to the tanks - Delicate extraction by 1 to 2 shedding at the beginning of the fermentation phase and then by small fractional pumping up until the end of fermentation. Post fermentation vatting hot, up to 32 ° C in 2015 for the most beautiful vats. Total vatting of 3 to 5 weeks.

SOIL:
Fluvio-glacial alluvium and loess terraces in the southeast of the appellation for ¾ of the assemblage and granitic hillside surrounding the Hermitage for the rest.

Tasting Notes

Appearance:
Deep red.
Nose:
Powerful nose of black fruits (blackcurrant and cherry) accompanied by notes of violet licorice typical of the floral nose of Crozes-Hermitage.
Palate:
The mouth of this 2015 is all in power, a racy and structured wine. The concentration of this vintage masks a little the terroir in its youth but can not leave indifferent.

    "The 2017 Crozes Hermitage les Paillanches blends grapes from loess and granitic soils and ages them in a mix of 300- and 600-liter barrels for a year. Black cherries take on subtle spice shadings in this medium to full-bodied wine that comes across as being tight and needing a bit of time to soften."

    "The 2017 Crozes Hermitage Les Paillanches is much more moderately styled and offers a vibrant purple color as well as tons of blackberry, cassis, licorice, graphite, and ground pepper. With background oak, beautiful purity of fruit, and a full-bodied mouthfeel, it's already drinking nicely yet should keep for 4-6 years."
