Established in January 1938, the Protected Designation of Origin Chablis is located nearby Auxerre, along the river with a predestined name "Le Serein". The continental climate, hot in summer, cold in winter, with strong frosts in spring - associated with a limestone and marly soil, makes the Chablis with a stunning quality. The rock contains deposits of tiny fossilized oyster shells. Regarding the Premier Cru, the particularity is that they are produced on either side of the Serein river (left bank and right bank). The most famous climates are those on the right bank.
Bright gold color. Intense nose with hints of almond and white blossom. This Premier Cru offers a good balance of subtle white fruit flavors and fresh elegance.
Whole bunches are collected in a pneumatic press, then 12 hours settling at 12 to 15˚C in specially designed wide tanks to accelerate the natural settling process. 3 weeks of fermentation at 18˚C in stainless steel tanks.
