AOC Chablis, Burgundy

This Grand Cru, a very rare wine, comes from a clay and limestone soil of Kimmeridgian on the right bank of the Serien River.  The continental climate, hot summer, cold winter, with strong frosts in spring, makes Chablish a wine of remarkable quality.

Tasting Notes

Beautiful bright gold-green dress with a silver fringe.  The nose is rich in mineral aromas (flint, gunflint) but also has aromas of ripe fruit and green almond.  The attack is frank with persistence and a mineral finish.  This wine is long and racy.

This great racy vintage calls for a refined cuisine: carpaccio of scallops with vanilla, langoustine tempura with orange butter, tajine of monkfish with spices, bar, turbot or St-Pierre roasted...And cheeses like Brillat-Savarin, Chaource, Vacherin.

Fermentaton under temperature control in stainless steel tanks.  Great Chardonnay guard par excellence.
