Tasting Notes

Beautiful golden dress with green tints.  The nose is intense and reveals notes of peach and apricot.  In the mouth we find a toasted side, grilled due to undergrowth, accompanied by fruity touches.  The attack is frank, the finish lingering and unctuous.

This Chassagne-Montrachet will go very well with crustaceans and shellfish in light sauces (scallops au beurre blanc, lobster in a champagne sauce...), fine roasted fish (John Dory, Turbot...), poultry à la crème, and with relatively mild cheese such as Brillat-Savarin.

Very small production.  Fermentation and aging in oak barrels.
