Bibi Graetz Colore Rosso

Colore is the highest expression of Bibi Graetz dream, from very old vineyards of Sangiovese. Poor soils mixed with sand and stone and high altitude create the perfect terroir for a wine that tells a lot about Tuscany and its ancient taste. Only the best few barrels of the whole production will become Colore.

Three new elements characterize the 2020 vintage. One is the climate. Our best vineyards have never expressed their self so well as in 2020. The new vineyard in Olmo, which brought an incredible freshness to the wines. It has a magic terroir at 420m high. The third element is the new winery in Fiesole in which we managed to work in more evolved and comfortable way. We have now all the tools we need for creating the Testamatta and Colore that we want. In 2020 the growing season was generally warm. After a mild winter, spring started with rains just before the flowering allowing the water supply of the plants. Summer came quickly with high temperatures and drought but fortunately cool nights brought refreshing breezes which helped to preserve both the grapes acidity and aromatic character. Some rainy days before the harvest allowed to reach the ripening of the grapes. The harvest started on September 24th and finished October 15th.

The fermentation is conducted by indigenous yeasts naturally with 6 to 8 manual punch-down and pump-over per day and lasted up to 2 weeks, with one extra week of maceration on the skins. After the fermentation the wine is moved into old barriques, where the malolactic fermentation happens. Each parcel is aged separately for almost 20 months before the final blend is decided.

The grapes of Colore were selected from 4 vineyards: Lamole, Vincigliata, Olmo and Siena.

“Monumental, there is no better word to describe this vintage. Roundness in every single aspect of the wine: elegance, freshness and great acidy that gives very fine layers surprisingly detectable on the nose and at the first sip. Colore 2019 celebrates my 20th anniversary as a winemaker. It has been a great journey since 2000, full of satisfactions and now with this vintage I finally close the circle. My wines at the beginning were looking for structure and concentration, in 2009 I realized that “elegance” should have been the main drive. In 2019 I did it!” -Bibi Graetz

Vintage 2019 provided the best conditions for a full and healthy development of the plants. During the spring, the limited quantity of rain prevented the onset of illnesses. The summer was characterized by a good thermal excursion between day and night with a very “smooth” climate which gave the possibility to the grapes to ripen slowly and completely. The result was that the grapes had the perfect quantity of sugar and acidity with an incredible aromatic texture. The harvest started on September 21st and ended the 8th of October.

The grapes sourced for Colore were selected from 3 vineyards: Lamole, Vincigliata and Siena. Each vineyard was harvested up to 8 times, allowing to hand-pick the grapes at the perfect level of ripening. After the first selection in the vineyards, a second selection occurs at the winery before the destemming. At this stage the berries were softly pressed and placed in open-top barriques, with extreme attention on keeping each plot and parcel separate from the others. The fermentation is conducted by indigenous yeasts naturally with 6 to 8 manual punch-down and pump-over per day, without temperature control and without bleedings, and lasted up to 2 weeks, with one extra week of maceration on the skins. Colore is the highest expression of Bibi Graetz dream.  The drive of this wine is to create a pure excellence of Tuscany, a wine made with traditional Tuscan grapes sourced from some of the oldest and rarest vineyards of the region.  Sangiovese represent the structure and the power of the wine, Colorino fruits and velvety tannins, Canaiolo minerality and intensity. On the best few barrels of the whole production will become Colore.

Tasting Notes

"After the 2015 vintage I couldn't believe that the quality of the 2016 was even higher!  Walking in the vineyards during the harvest I had the impression of being in the middle of hundreds of bronze sculptures, the grapes looked like perfect artifacts.  I'm not surprised by the result of the wine, powerful, with a lot of tension and a solid structure.  Full bodied and dense, this Colore has a lot of blackberries, tobacco and plum."  -- Bibi Graetz

This vintage has a very high reputation all over Italy, especially in Tuscany.  2015 and 2016 has been some of the best vintages of the past years, in different ways.  In fact, 2015 is more approachable and less bodied and 2016 has more strength, complexity and structure.  The 2016 growing season has been very regular with a nice balance of rain and sun during spring and a mild winter before.  The vines had the chance to fully develop the vegetation, and the sporadic rains n Summer granted the right amount of water for the development of the grapes.  September and October had only a few days of rain and were mostly sunny allowing a long ripening time and harvest.  Harvest started the 26th of September and finished the 3rd of November.

"2015 was an outstanding vintage and Colore 2015 in my opinion is its expression. The harvest was incredibly perfect, very healthy bunches of the same size and weight, something that neither appears to be part mad by nature. Excellent structure and balance, many layers of aromas, dark fruits, orange peel, herbal tones, rosemary and very delicate mineral hints. 2015 was a superb vintage all over Tuscany and in some areas, we reached very high peaks of quality. The winter was rigid, cold and rainy followed by an irregular spring that lead into an exceptionally hot and dry summer, with a small difference of temperature between day and night and only few days of rain at the end of August. These features conceived the wines with a suitable level of concentration and fruity aromas.

    "The 2020 Colore is spiced and pure, with vibrant ripe cherry, cinnamon, and cedar. There is elegance and ripeness within its medium frame, revealing notes of wild raspberry, dried herbs, and orange zest. There is another level of refinement from the Testamatta that will continue to improve over the coming 15-20 years. Located in Fiesole, Bibi Graetz founded his eponymous estate in 2000. All the red wines are entirely produced from Sangiovese and offer the wonderfully polished style of the region, which is why I have included them here as a stepping stone for what is to come with my next report on Chianti."

It offers a very cherry palate, with wet stone, white pepper, rose petal and chocolate-covered orange slice. A bright and lively wine, it balances structure with playfulness, and delivers fruit that is mouthfilling without turning velvety."

    "The 2020 Bibi Graetz Colore has beautiful, appetising aromas of savory wild herbs, wild-flowers and Mediterranean shrub with a light peppery note and on standing there is an aroma of strawberries warmed in the sun. The palate is round and soft, then mouth-wateringly fresh, then it finishes with savory, salty tannins. What I love is that the flavours are clearly delineated and remind me of Sangiovese and the Tuscan landscape with bitter cherry, light sea salt, iron tonic and wild herb notes. The flavors are quite fragile but persistent, the texture is fine and silky and there is a lot of savory, mineral tension in this wine."

    "The subtlety and perfumed nature of this wine is enchanting, offering flowers, orange peel and cherries. Wonderful ripe strawberries, too. Full-bodied, but not over the top, with tannins that are polished and run the length of the wine. It’s tight, but gives you every indication of a terrific wine. You want to drink it now, and you probably should do, because it’s so alluring. Yet it will age beautifully as well. Drink or hold."

    "The Bibi Graetz 2020 Colore is a pure expression of Sangiovese all sourced from old vines that are carefully selected in various parts of Tuscany. Much of the fruit comes from a high elevation and cool site in Lamole, or from 70-year-old vines in Bagno a Ripoli or Vincigliata near Fiesole. A small percentage of old vines in Olmo is also used. Bibi has a preference for old vines, and you can taste the lovely depth and complexity that comes through in the Colore. Compared to his other wine Testamatta, this wine has seen fewer stylistic changes over the years, and the goal has always been elegance and finesse. Colore boasts a pretty luminous quality with dark fruit aromas and wild berry. There are hints of licorice and mint as well. Mineral flavors and bright acidity are what set Colore apart."

    "Wow - this is sumptuously pure, ripe and delicious. It is a show stopper! This tastes of sweet cherries, baked strawberries in a cobbler and raspberry preserves. The tannins have some lightly nudging dryness that is readily absorbed by the electric, concentrated fruit core. The acidity is vigorous and refreshing. Full-bodied with seamless structure, this will easily age well. (Aged in old barriques for 20 months.)"

    "Dressed for a party, the Bibi Graetz 2019 Colore celebrates the estate's 20th anniversary with a special commemorative (2000-2019) bottle. This vintage of Colore is 100% Sangiovese (the small part of Colorino in the blend we saw last year has been removed) because Bibi thought the Sangiovese elegant enough to stand alone. Fruit comes from three vineyard sites with 70-, 80- and 90-year-old vines, respectively. The wine offers big intensity and beautifully lifted aromas and more textural support than we saw in the slightly thinner 2018 vintage. The bouquet reveals balsam herb, cassis, pressed rose, garden mint and crushed stone. Fruit from the southern-most site, Poggio Matto in Casciano del Murlo (in the province of Siena), was blended in at a greater percentage to help build the structure and momentum of this cellar-worthy wine."

    "A blend of Sangiovese (at about 80% of the mix), Canaiolo and Colorino from three far-removed vineyard parcels in different areas of Tuscany, the 2016 Colore is something of a pan-Tuscan wine. This ambitious wine gives voice to three of the region's most important red grape varieties as well as its most diverse territories (Lamole in Chianti Classico, Vincigliata near Florence and Siena province in the southern part of Tuscany). As a result, this is a statement wine with a lot to say to those careful enough to listen. It's important to be attentive to the details, the small berry fruit aromas that intermingle with nuances of spice, granite stone and pressed blue flower. Pure summer cherry is the dominant aroma on first nose, but it slowly disintegrates as the wine takes on more air to reveal those lighter and more delicate aromas at the back. This vintage offers an ideal dose of structure matched against freshness. Bibi Graetz tells me that fruit in 2015 was beautiful, perfect to look at. Fruit in 2016, however, appeared more sculpted with more darkness and weight. On some level, those descriptions also apply to the character of these two gorgeous back-to-back vintages. Some 6,000 bottles were made."

    "This is wonderful on the nose with orange peel and even lime. Leather and hints of cherries. Some savory rosemary undertones and smoked meat. Forest floor, too. Full-bodied, tight and focused. A serious finish that is polished, dense and fresh. Excellent structure. 80% sangiovese with colorino and canniolo. Needs three to four years to come together, but it’s already excellent."

    "The 2015 Colore is a breakthrough wine for Bibi Graetz and his unique approach to winemaking and fruit sourcing. Remember, this renegade Tuscan vintner dedicates much of his intellectual effort to discovering the ancient vines and vineyards he wants to farm. He is like a high level garagiste who does not pretend to limit his fruit selection to vines under his direct ownership. This affords a level of versatility and range that is not common to the many family-owned estates of Italian viticulture that focus their efforts on their own land. Colore is a blend of equal parts Sangiovese, Canaiolo and Colorino from three sites (Lamole, Vincigliata and Siena). The 2013 and 2014 vintages were skipped, and Bibi Graetz has moved forward directly to 2015. I tasted this wine from four bottles: one opened the previous day at lunch, one opened the night before, one opened that morning and one opened just before I poured the sample into may glass. This approach awarded an interesting panoramic view of the wine's evolution, but in truth, it did not change as much as you might think. I mean this in a positive way, because the wine in no way tasted flat or oxidative. Of course, the recently opened bottles showed some nervous and rigid qualities, whereas the bottles that had been open longer were softer, more expressive and more fleshed out. Colore offers dark and determined quality of fruit with layered tones of ripe cherry, dried blackberry, spice and grilled herb. Elegant mineral tones also appear. This is a unique wine with a personality that marries a wild side to a sophisticated one. This is a singular Tuscan red"
